Lollipop · 3.4 in · birch stick
Midnight Orchard
Black currant wrapped around a core of burnt honey. Dark at the edge, glowing in the middle.
Flavour notes are on the candies page — we would rather you taste it first.
Handmade in Minneapolis
Can you guess the flavour at first bite?
We cook hard candy in batches of forty on Huntington Avenue: dark fruit next to burnt honey, clear sugar with copper spirals inside, amber slabs broken by hand. Six flavours a season, no filler ones.
Forty pieces at a time, sometimes thirty. It is slower than a machine and it is the only way we can watch the sugar closely enough to keep the colour clean and the flavour where we meant it to be.
Honey with toasted fennel. Lemon cream with star anise. The first bite is familiar and the second one is not, which is roughly the point of the whole shop.
There is no cart here. You send us a note about what you would like, we write back with what is in the works, the price and a date. Usually it is me answering.
This season's counter
Every piece is made in the same kitchen, on the same three marble slabs. What changes is the colour work and the flavour, which is why regulars tend to have one they defend.

Ordering
Use the form or call. Name, email, which candies, roughly how many. A sentence about the occasion helps more than you would think.
With what is in the works, what needs a new cook, the price and the earliest date. If we cannot make your date, we say so.
Nothing is charged through this website. Once you confirm by email, we put your batch on the schedule and cook it fresh rather than pulling from stock.
Collection from the workshop on Huntington Ave, or we ship within the United States when the weather allows hard candy to travel well.
“A lollipop should be a small argument with yourself: you know what it is, and then you are not so sure.”

Next batch
We take requests by email rather than through a shopping cart, because every batch is planned by hand. Send us a note and we will confirm flavours, quantity, price and a pick-up or shipping date.
